It is my understanding that the .grass style sheet is only applied to the resulting graph view (after you run a cypher query). I believe what you propose is language specific styling of cypher in the editor? An interesting idea, but I think that would be a feature request.
You can manually change the style of the visualization (e.g. node color by :LABEL), and doing that first is a good way to become familiar with the basic capabilities, and these can be saved to a .grass file. You can do a bit more using a .grass file than with the neo4j browser view, but the basics are the same.
